For A Good Time
Hello again friends! How are you? Things are good here on the sheep farm. Anna Lee and I are doing just fine. We've settled in (I say that every time, I know, but we just keep getting more and more settled). I think we found our new routine and it's really working for us. We take daily walks. Anna gets to play outside a lot. She has 4 other doggie friends here. Plus all those treats from the sheep...if you catch my drift. Heheeh.
Ah! Back office things have resolved themselves! I love it when that happens. I'm not sure what happened with the last post but there were some issues with some of the features behind-the-scenes. They just disappeared. But today? They're back! YAY!
Easter and what we (almost) made
We celebrated Easter here on the farm. We did a small gathering of friends. I roasted a chicken with veggies. We had homemade bread with cheese. And that beautiful chocolate cake. We opened a bottle of red wine. It was so nice! I've been cooking a lot more. I've made homemade pea soup and countless other dinners. It feels good to be getting back to what I love doing. I even have a recipe for you!! See below! I brought a lot of my product making supplies to the farm with me. I'm hoping to make some more things in the very near future. I'm still trying to decide what I want to do with my business. I got very burned out over the past couple of years. That will happen when you are trying to be everything to everybody (or one person, anyway) and you're not filling your own cup. I've been working on filling my cup back up so the business has taken a bit of a backseat while I regroup and recharge. But I'm getting there. I have all kinds of things percolating!

Speaking of working. I've been booking classes and I'm really enjoying those! I'm plugging away at the innkeeping. We're still under construction, but things are moving along quick now! I've picked up a couple of side hustles. So things are going really well in that department. I'm still making time to do other things too. But be on the lookout for this working girl and all the things! hahah.
It's almost time for spring here in upstate NY! We're getting closer and closer. And that means time spent outdoors. I did a big load of laundry yesterday (all the sheets and blankets) and hung them out to dry! Oh boy! Do you hang your laundry outside? I just love that smell. I slept so good last night with those clean sheets and that outdoor smell. I can still smell it as I'm writing this. Sigh. I'd like to bottle that smell and keep it with me at all times.
A Bakery and Time to Myself
I've treated myself to some time at a local coffee shop. How cute is this place? I had a BLT, iced coffee, and then chocolate mousse cake for dessert. Then I walked around and took some pictures. This is the same place where I took my photography class a couple of weeks ago. I'm not going out as much as I used to and that's okay. I like being home. I've been working from home but also at the inn some days. I run errands. I treat myself to a coffee here and there. But I've always liked being at home--where ever that might be. And now is no exception. I just love being cozy at home, doing things, working, walking, whatever! I've been brushing the horse a couple of times a week. I've started yoga at night. I love snuggling with the dogs. Or walking outside and seeing the sheep. It makes me happy. I know some people need to be out. They can't be home alone. But I'm settling into this new phase of my life and figuring out what it is that I want. It's been too long since I've focused on me and what I like. What I want out of life. What makes me happy. And friends, my heart is happy. Finally. I've even lost weight to the tune of at least 15 pounds (I don't own a scale...I was down 15 pounds when I was at the doctor a couple of weeks ago! Finally! haha. I've been trying for so long! Of course, I did get sick and couldn't eat for a few weeks, so that probably helped. But so did all the walking. I'm still walking (I know, I've mentioned that. LOL). But Anna and I didn't walk as much once we moved to the sheep farm...we were just trying to settle in and find our routine. But now that we're here and settled, we've been walking more. I'll take some pictures from our walking route and share those in a future post.
A Recipe
How about a recipe? It's been a while since I've shared one with you. This one is for whole wheat blueberry muffins. The recipe is adapted from Cookie and Kate blog.
Whole Wheat Blueberry Muffins
adapted from Cookie and Kate
Ingredients:
1 ¾ cups whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon fine sea salt
¼ teaspoon ground cinnamon
⅓ cup melted coconut oil
½ cup maple syrup
2 eggs
1 cup plain Greek yogurt
1 cup blueberries
milk
Instructions
1. Preheat the oven to 400°F. Grease 12 cups on your muffin tin.
2. In a large mixing bowl, combine 1 ¾ cups of the flour with the baking powder, baking soda, salt and cinnamon. Mix them together with a whisk.
3. In a medium mixing bowl, combine the coconut oil and maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt. Mix well.
4. Pour the wet ingredients into the dry and mix with a whisk or spoon, just until combined, batter will be lumpy. If the mixture is too dry, add a splash of milk until the batter thins out a little. The mixture will be thick. Gently fold the blueberries into the batter.
5. Divide the batter evenly between the 12 muffin cups. Bake the muffins for 15-20 minutes, or until a toothpick inserted into a muffin comes out clean.
