Blueberry Crisp

Friends! Do I have a treat for you! I was invited over to a friend's house for dinner and I was charged with bringing dessert. I wanted to make something that I hadn't made before...or at least something that I hadn't made for a very long time. And then I wanted to share the recipe with you. So I dug deep and came up with blueberry crisp! It was the perfect dessert to make in the morning and then take along with me (I had to work at the library before heading to their house for dinner). And I do believe the crisp was a big hit. I served it with ice cream!! Dinner was nice--clams with veggie over pasta with a béchamel sauce. YUM! It was good catching up with people that I hadn't seen in a long time. And then we had a nice walk afterwards to work off some of that food. Anyway, friends. This recipe is so easy. You can throw it together in a few minutes and let it bake while you are moving and grooving around the kitchen. Then serve it warm with some vanilla ice cream. No one will ever know how easy it was to make!

The Recipe

Blueberry Crisp

Ingredients
Filling:
6 cups blueberries, fresh or frozen
1 tablespoon cornstarch
1/4 cup sugar
pinch of salt
Topping:
1/2 cup all purpose flour
1/2 cup oats
1/4 cup light brown sugar
1/4 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 stick room temperature butter

Instructions
1. Preheat oven to 375 degrees F.
2. Toss blueberries, cornstarch, sugar and a pinch of salt together in a bowl.
3. Combine flour, oats, brown and white sugar, cinnamon, and nutmeg in a bowl. Add butter and pinch into chunks. Mix until it looks crumbly.
4. Add the blueberries into a baking dish. Top evenly with the crumb mixture. Bake for 40 minutes.

That's it! Didn't I tell you it was so easy! And so yummy! Enjoy friends.
